The Mercat cavas make up the most exclusive line of Molí Parellada. Practically all of the Mercats are aged for more two years. The Mercat cavas bring together the best qualities of the great cavas: delicate and creamy, therefore their elegance and austerity define Molí Parellada's top range.

With a wide repertoire that includes rosé, gran reserva and reservas, the Mercat line is know for one of the longest aged cavas.

Reserva Brut Rosé

The rosé cava is made with Pinot Noir and Garnacha Tinta, by following the traditional method with a second fermentation in the bottle for at least 24 months.

It is a bright salmon pink color with constant, small and well integrated bubbles.

The scent is sweet and citrusy, with an intense yet fresh aroma and hints of red fruit.

It has a fresh, fruity with great creaminess as well as smooth and perfectly balanced taste on your palate.

Reserva Brut Nature / Brut

This cava is aged for a minimum of 24 months and is made using the traditional method with a coupage of Macabeo, Xarel·lo and Parellada.

It is a bright straw yellow color with golden reflections and fine bubbles.

Its aroma is intense, with hints of toast, pastries and ripe fruit.

It has a smooth entry, with a less marked acidity due to the small amounts of expedition liqueur it contains. It is also a versatile product that is easy to pair.

This cava is aged for a minimum of 24 months and is made using the traditional method with a classic blend of Macabeo, Xarel·lo and Parellada grapes.

It has a bright straw yellow color with golden reflections and fine bubbles.

Its aroma is intense, with hints of toast, pastries and ripe fruit.

It creates a balanced, full-bodied and persistent taste. With a touch of spices and dried fruits from the autolysis process: a long contact with the lees during the aging process.

Reserva Brut Nature Special Edition

This is a special edition made to celebrate the 30th anniversary of the winery and due to its popularity, this cava was incorporated into the catalog on a permanent basis.

This cava is aged for a minimum of 18 months and is made with Macabeu, Xarel-lo and Pinot Noir varieties. The latter gives it the touch of elegance that marks the difference from the classic coupage, because of the use of red grape vinified in white wine.

Its color is lemon yellow with golden reflections, fine, long and persistent rising bubbles.

There are tertiary aromas of toast and a strong scent of nuts, as well as citrus.

Its taste has balanced acidity and creaminess which is provided by Pinot Noir, the freshness of the Xarel·lo and the body of the Macabeo.

Gran Reserva Brut Nature

This cava is made from Macabeo and Xarel·lo grape varieties.

It has a deep yellow color and fine bubbles.

The aroma is intense, with slight hints of white flowers, ripe baked fruit and very soft traces of brioche, nuts and honey.

The taste is dry, with well-integrated carbon dioxide and refreshing acidity. Its long aging process of a minimum of 48 months results in the cavas maturity and great complexity. It provides a pleasant experience with a persistent finish.

Gran Reserva Brut Nature Magnum

This cava is made with the Macabeo and Xarel·lo varieties, in a magnum style bottle (1.5 liters) where it undergoes its second fermentation for a minimum of 48 months.

It presents an intense yellow color with golden reflections and fine bubbles.

There is a balanced aromatic intensity that is accentuated by oxygenation in the glass. It shows tertiary aromas of pastry, creme brulée, baked fruit, citrus, grapefruit and elegant traces of anise and fennel.

The taste is full-bodied, with well-integrated carbon dioxide, a balanced acidity and a long persistence.

This cava is made with the Macabeo and Xarel·lo varieties, in a magnum style bottle (1.5 liters) where it undergoes its second fermentation for a minimum of 48 months.
